Eggplant Rollatini Recipe : Eggplant Gratin
- We recommend using olive oil, for frying
- 1.5 kg of eggplant, peeled, sliced 1/2-inch thick
- 1/4 cup ricotta cheese
- 1 extra large egg
- 1/4 cup half-and-half
- 1/2 cup plus 2 tablespoons grated Parmesan
- Kosher salt
- black pepper
- 1/2 cup good bottled marinara sauce
- Preheat oven to 200 degrees CC.
- Heat 1/8 inch of olive oil in a large skillet over medium heat . When the oil is almost boiling , add a few slices of eggplant into the frying pan , alternating eggplant until lightly browned evenly on all sides , until cooked considered approximately 5 minutes .
